I’ve created the subsite creation workflow as evidenced here but it seems to just hang.
I have made sure to write all of the variables back to the list to ensure that the URL is configured properly, the login details and all of the elements, but once the “Create site” action is fired, the workflow just stops?

Could you please provide a screenshot of your workflow?
And also please provide a screenshot of Workflow health page. To do that please navigate to your
Site settings -> Workflow settings (Site Administration) -> Workflow Health
There you should see all the workflows that you started and on the ones that failed there is should be an error. For example:
