How can I sort the field list alphabetically, I have a long list of fields and they seem to be sorted randomly making it difficult to find the one I am looking for in the list.

Currently, it is not possible to sort or filter SharePoint fields in the designer.
I will pass on the idea of adding this functionality to our development team, they will review it and might add it to our roadmap.
