I understand that we can add a clickable logo and change the background color on the top banner that shows on the "Page". Is it possible to add text as well? This is in reference to the pages that you create to view the forms.

You can add text next to the logo and make the background of the picture transparent, so it looks like this:
And you can set the logo link in the settings pane:
