We recently purchased WAP and I can see the advanced string processing options in SharePoint Designer, but there is no option for converting HTML to PDF like I see on your blog and the feature list. Am I missing something or is there an extra step to activate this? Please advise.

What is your version of SharePoint? Updates for Workflow Actions Pack for SharePoint 2013 On-Premises appear with delay. The new functionality will be available on November 24.
