Is it possible to generally pause the synchronization to Entra ID and trigger the sync manually via a button so that changes are only loaded when required?
This would have the advantage that updates made in Entra ID for testing purposes would not immediately appear in the organizational chart.
And it would also allow us to build a dedicated test environment.

Regarding the feature, one possible alternative is to use an Excel/CSV file as data source. This approach allows you to control which changes are reflected in the chart and when they are applied.
Moreover, it could be a great fit for the testing scenarios you mentioned, since you could maintain different files representing different states of your data. Excel/CSV data source also provide the flexibility to edit your employee information without affecting the actual underlying Entra ID data source.
