How to hide all the format features for a multi-line text field? I want to call it Message and allow users to write in and not have the option to format anything.

You can change the type of multi-line text field to plain text.
Thus users can enter text but with no formatting.
For this, go to List Settings >> Columns >> Multi-line text column.
