We have been testing Plumsail, and would like to delete all tickets prior to going live. Is this possilbe?

you can delete all the items in the ticket list with SharePoint default "Delete" button, this will lead to the cascade delete of all connected items in other lists.
After that, you can reset the ticket ID counter to reset the ticketing number.
