Am I to understand that this Plumsail Action will grant permissions to a list item based on group (AD Group or SharePoint Group or Both)?

Hello Marion! You can grant permissions to both SharePoint and AD groups. For the first one, use its name. For the second one, use its e-mail address that you can find in Microsoft 365 admin centre:
